Salmon with Balsamic Honey Glaze and Cheesy Mashed Potatoes
Topped with a sweet honey and balsamic vinegar glaze and oven-baked until flaky, this salmon is best served with a side of creamy, cheesy mashed potatoes and garnished with fresh micro greens.
Directions
Heat oven to 375°F.
In a small saucepan, melt butter over medium low heat. Add garlic and stir until fragrant. Stir in balsamic vinegar, honey and mustard. Simmer until mixture thickens to a glaze consistency.
Place salmon fillets on a foil lined sheet pan that has been coated with non-stick spray.
Brush glaze liberally on top of salmon portions. Bake 12-15 minutes until salmon is cooked and flakes easily with a fork.
Serve on top of Cheesy Mashed Potatoes. Drizzle plate with any remaining glaze and top salmon with micro greens to garnish.

Directions
Place potatoes in a medium stock pot and cover with water. Bring to a boil and cook until tender. Drain, and return to pot.
In a small saucepan, heat half & half, butter and salt until butter is melted. Slowly add to the potatoes while mashing. Stir in cheese and mix well.
