Seared Salmon over Mediterranean Couscous and Dill Crème Fraiche
Directions
 

In a large bowl, combine ingredients for the Mediterranean Couscous Salad (pearl couscous, cucumber, red onion, cherry tomatoes, chickpeas, artichoke hearts, kalamata olives, mint, parsley, feta cheese, olive oil, lemon juice, kosher salt, and black pepper). Set aside.

 

In a medium sized bowl, combine ingredients for Dill Crème Fraiche (crème fraiche, dill, shallots, lemon zest and juice, kosher salt, and black pepper). Set aside.

 

In a large stainless-steel pan over high heat, add the olive oil.

 

Place salmon filets skin side down and sear for 3-5 minutes until the skin is crispy.

 

Flip salmon on its side, and sear for 1-2 minutes until golden brown. Repeat on all sides.

 

Place the salmon on a plate and top with dill crème fraiche and a side of couscous salad.

4 oz Crème Fraiche

2 Tbsp dill, chopped

1 Tbsp shallots, minced

1 each lemon zest & juice

1/4 tsp kosher salt

1/4 tsp black pepper, ground

4 each salmon filets, skin on

1 tsp kosher salt

1/2 tsp black pepper, ground

1 Tbsp olive oil
